I TOTALLY cheat with my icing and use Betty Crocker's Frosting, it's ready made in a tub and comes in chocolate and vanilla flavours. It's so easy to use and you can colour the vanilla one with food colouring. You can also warm it slightly in a microwave to make it runny enough for a piping bag. A word of warning though - it is REALLY nice!
